Holiday Sugar Cookies




Does your family have a cookie that is a staple for every holiday? If the answer is yes, it is probably a sugar cookie! Sugar cookies are always a crowd pleaser in our family, and these vegan and gluten-free cookies will leave everyone reaching for another.




These cookies are perfect rolled in sprinkles but could also be topped and decorated with any type of glaze or icing. No matter what, these will be a favorite for Santa.





 

Yields 12-14 cookies


Ingredients

  • 5 Tbsp softened vegan butter

  • ½ Cup sugar

  • 1 Cup 1:1 gluten-free flour

  • 1 Tsp guar gum

  • 1 Tsp vanilla extract

  • ½ Tsp baking soda

  • ¼ Tsp sea salt

  • 1-2 Tbsp plant milk based on how dry the dough seems

  • 1 ½ Tbsp unsweetened applesauce

  • Christmas sprinkles

Instructions

  1. Preheat the oven to 350 degrees F and line a baking sheet with parchment paper or a silicon mat.

  2. Cream together the butter and sugar using a stand mixer or hand mixer.

  3. Once combined, add the vanilla and mix.

  4. To the mixture, add flour, guar gum, baking soda, salt, plant milk, and applesauce, and combine until a dough forms.

  5. * If it appears dry, add the extra tablespoon of milk. It may seem crumbly, if this is the case use hands or spatula or further combine.

  6. Roll dough into balls slightly bigger than a tablespoon.

  7. Roll in sprinkles, flatten slightly, and bake for 10-15 minutes. Cookies should be golden brown around the edges and resist slight touch in the center.

  8. Remove from the oven, and allow cookies to cool for 5 minutes on the baking sheet before transferring to a cooling rack.
